Simon Maillet is a maker of chef's knives, the now-Nantes-based bladesmith takes a functional perspective towards his craft. His philosophy of functionality over appearance  is, ironically, what makes his knives so beautiful. Having supplied knives to some of the biggest chefs in the UK and beyond, it was a pleasure to shoot this short documentary with him and learn more about his craft.
